Original Panettone Recipe For Fruits:
1 cup of raisins
quarter cup
Quarter cup candied lemon peel sugar
A pinch of grated lemon peel
A pinch of grated orange peel
For starting yeast;
Quarter cup warm water
1 pack of dry yeast
A little more flour than half a glass of water
Half teaspoon salt
For Panettone;
2.5 cups of flour
1 pack of dry yeast
Half teaspoon salt
Half teaspoon of sugar
Half a glass of warm milk
5 eggs -at the temperature of the room-
3 tablespoons of butter -at the temperature –
2 tablespoons honey
1 Vanilla stick
Let’s start by preparing the fruits. Place raisins, candied lemon peel, candied orange peel, and grated lemon and orange peel in a small bowl and pour 1/4 cup of hot water on it. Mix, cover and leave for at least 2 hours for a maximum of one night.
Initial yeast preparation;
Mix the yeast into warm water and leave for about 10 minutes until it is foamed.
When the yeast foam, bring the flour, salt and yeast mixture together and knead for 5 minutes.
At the end of the kneading process, put the fermented dough in a bowl and close it with stress film.
Keep it at room temperature until the dough doubles.
Then lift this dough to the refrigerator and let it rest during the night.
The next day you should wait for the dough to come to room temperature before you start using it. This will take about 2 hours.
While our start -up yeast reaches room temperature, let’s start making Panettone dough by mixing flour, yeast, salt and sugar.
Slowly add milk and egg yolks to the mixture.
Add the start -up yeast prepared 1 day in advance to the main mixture and knead politely for 5 minutes.
At this point, softened butter should be added to Vanilla and BA and the kneading should continue for 10 minutes.
The dikkak mixture should be completely smooth and elastic, but it should not be overly adhesive!
Let’s add our smooth dough, our sugary fruits and grated and let them rest for 3 hours. At the end of 3 hours, the dough will rise to almost 3 times!
