Speculoos, Speculaas or Dutch Windmill Cookies, also known as the recipe, is a kind of spicy biscuit or cookie with the Netherlands and Belgian.
These cookies are traditionally cooked in the winter holiday season, especially for the celebration of St. Nicolaos on December 6.
Speculoos Cookies; It is known for its crisp tissues and rich, warm and aromatic flavors from the mixture of spices such as cinnamon, ginger, cardamom, muscat and clove.
The dough is usually shaped with animals or other figures.
What’s in Speculoos spice? It is a mixture of hot and aromatic spices commonly used in traditional Dutch and Belgian ovens, especially in Speculaas cookies.
Typically, cinnamon, ginger, muscat, cardamom, clove and white pepper are used in this mixture.
Some variations are also added to new, anise or coriander.

How to make Speculaas Cookie? Materials
2 cups of brown sugar
1 cup of salt -free butter (at room temperature)
2 large egg yolks
3 tablespoons heavy (Heavy) cream (whipped)
1 teaspoon of vanilla extract
1 teaspoon of lemon peel grated
1 cup of almond flour (may also be another nuts flour, like hazelnuts)
3 cups of white flour
Half teaspoon salt
2 teaspoons of dust cinnamon
Half teaspoon of amulet powder
Half a teaspoon of dust cloves
Half teaspoon powder ginger
Quarter teaspoon dust cardamom
Quarter teaspoon powder anise (request)
Preparation of
Beat the grated sugar, butter, egg yolk, cream, vanilla and lemon peel for 5-6 minutes until it is fluffy in the mixer.
Add the almond flour and stir until it joins.
Combine white flour, salt and spices in a separate bowl.
As you continue to beat, add this flour mixture to the wet mixture slowly.
If the dough is too dry, add some more egg yolk.
Turn the dough into a ball, wrap tightly with stretch film and let it rest for at least 5 hours.
Do not put the dough in the refrigerator.
At the end of the time, open the dough on a slightly floured surface to approximately 4 mm thick.
You can use molds, or molded rolling pin to shape Speculoos.
If you are using the mold, be sure to lightly flour lightly to prevent sticking.
Place the ready cookies on a non -stick baking tray. Let the cookies rest for at least one hour before cooking.
Heat the oven to 190 degrees.
Speculaas cookies cook on the middle shelf for 10-12 minutes, until golden brown.
Let the cooked cookies cool. You can store it in an air -proof container when they cool completely.
Cookies can be stored for a few weeks in a cool place in an air -proof container.
