Here is a recipe for banana roll cake:
Ingredients:
* 1 cup all-purpose flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 3 eggs
* 1 cup sugar
* 2/3 cup mashed banana (about 2 medium bananas)
* 1 teaspoon vanilla extract
* Filling:
* 1 (8 ounce) package cream cheese, softened
* 1 cup powdered sugar, sifted
* 6 tablespoons butter, softened
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon banana extract
* Powdered sugar, for dusting
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10×15 inch jelly roll pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, beat the eggs and sugar together until light and fluffy. Beat in the mashed banana and vanilla extract.
4. Gradually beat in the flour mixture until just combined.
5. Pour batter into prepared pan and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
6. Immediately loosen cake from edges of pan; invert cake onto a clean kitchen towel that has been sprinkled with powdered sugar. Remove pan; carefully peel off paper.
7. While cake is still warm, roll it up starting with the long side. Let cool completely, seam side down.
8. To make the filling, beat together the cream cheese, powdered sugar, butter, vanilla extract, and banana extract until smooth.
9. Unroll the cake and spread with the filling. Roll up again, seam side down.
10. Dust the cake with powdered sugar and slice to serve.
Tips:
* For a richer flavor, use mashed ripe bananas.
* If the cake is too dry, you can add a tablespoon or two of milk to the batter.
* To prevent the cake from cracking, be careful not to overbake it.
* If you are not comfortable rolling the cake while it is warm, you can let it cool completely and then roll it up.
Enjoy!
