Battenburg cake; It is a popular cake type in the UK. Battenburg cake is made by cutting sponge cakes in two different colors and putting them on top of each other. Apricot jam is applied between the cake cakes and the cake is covered with almond cake dough. Cake is cut into square and served by slicing. The Duke of Battenburg, who married Princess Victoria, the grandson of Queen Victoria, took its name from this cake. 175 grams of powdered sugar
3 large size eggs
175 grams of flour
1 teaspoon of baking powder
1 teaspoon of vanilla extract
1/4 teaspoon of almond extract
2 tablespoons of apricot jam
300 grams of almond cake dough
Red food coloring
Green food coloring
Powdered sugar (to decorate)
Preparation: Heat your oven to 180 degrees. Lubricate a cake mold of 20×20 cm and cool the greasy paper.
Beat the butter and powdered sugar in the mixing bowl until it gets creamy.
Add the eggs one by one and add each one and beat thoroughly.
Add flour, baking powder, vanilla extract and almond extract and mix gently.
Take half of the cake dough into a separate bowl. Add a few drops of red food coloring into this dough and mix.
Add green food coloring to the remaining dough and mix.
Furnish in the cake mold first of the red dough and then the green dough into a half line. After finishing this process, apply apricot jam.
Place the remaining doughs in turn red and green in the form of half a line.
Bake the cake dough in a preheated oven for 25-30 minutes.
After the cake is cooked, let it cool.
Cut the cooled cake to 4 equal parts. Cut each piece to the erection, so that there will be 4 pieces, each containing red and green dough.
Place 2 pieces side by side and apply apricot jam on it.
Place the other 2 pieces side by side and apply apricot jam.
Place the cake on top of each other and cover them with almond cake dough. Do this for the other two parts.
Combine the almond cake -covered cakes and slice them by decorating them with powdered sugar.
