How to understand farm salmon? Breeding salmon are lighter and more pinky than wild ones. The color of the wilds is reddish or orange.
There are much less fat marbling in their meat because they do not fight against currents such as farm fish and wild ones.
The fillets that look very uniform and perfect in color are usually the ones growing.

What is the difference in Norwegian salmon Black Sea Salmon? Black Sea salmon grow at much higher temperature than in the Norwegian. This causes the Black Sea salmon to be less fatty and less developed. This salmon is lighter. It is also known as Turkish salmon.
