How to make Italian Rice Balls Arancini?
What’s in Arancini?
Materials
4 tablespoons butter (without salt)
Oil for frying 1 onion, finely chopped small size
1 clove of garlic
350 gr Risotto Rice (Arborio)
1 lt chicken, broth or vegetable juice
1 cup of parmesan, grated
150 gr mozzarella cheese
To cover
150 g flour
150 grams of galeta flour, thin
3 eggs

How to make Arancini Balls?
Let’s start by preparing the tariff risotto:
Melt 2 tablespoons of butter over medium heat. Add onions, garlic, spices and rice. Cook for about 5 minutes until the rice is softened by stirring occasionally.
Add half a glass of broth or vegetable juice to the pot. When the water is pulled, add half more glasses. Cook for 15 minutes until it is completely absorbed.
When the rice is softened, add the parmesan, 2 tablespoons of butter and parsley.
Transfer the mixture to a baking tray where you laid greasy paper, spread evenly and allow to cool for 20 minutes.
At the end of 20 minutes, cover it, let it cool completely for 2 hours.
Divide it into 24 equal parts when your Risotto mixture is completely cooled down. Turn each piece into a ball. Place the Mozarella cheese in the middle.
Soak the balls in the freezer before frying. This will prevent the disintegration of the balls.
Use a deep pan for frying. Prepare the panel on the one hand.
Put the flour into a bowl and the eggs in another person.
In a third container, blend breadcrumbs and spices.
Find the balls with the same ranking and throw it into the oil that is exactly angry. Fry the Arancini balls for about 5 minutes until the outside is completely golden yellow.
You can serve the balls with Arancini sauce (garlic tomato sauce). You can grate a little parmesan and add chopped parsley.
