Demerara sugar; It is a type of sugar cane with coarse -grained and light skin color.
It is widely used as decorating sugar in baking to add crispy crispy on top of flour products and is also popular to sweeten coffee, tea and other drinks.
It contains approximately 97 to 99 sucrose and approximately 2 percent molasses.
In addition to Turbinado sugar, raw sugar cane sugar is one of the several types of sugar classified as “raw” sugars, as well as products defined as washed sugar, vaporized cane water and others.
Contrary to popular belief, raw candies such as Demera are actually highly refined.
The term “raw” means that it is crystallized only once, contrary to being crystallized twice for powdered white sugar.

This syrup is crystallized by adding seed crystals and the crystallized syrup is returned in a centrifugal to separate the crystals from molasses.
It is then washed to remove all of them except the amount of molasses. To filter smaller particles, it is poured from the sieves and the crystals are allowed to have an equal medium rude between 0.5 and 0.3 mm.
Demerara sugar is slightly adhesive due to the trace amounts on it, but the crystals still flow freely and do not gather together. It has a mild caramel or confectionery aroma, but it does not taste especially molasses.
However, not all Demerarara is done in this way. Some Demeraralar are made by rotating sugar crystals and washing all molasses, separating the crystals according to size and then adding predefined amounts of molasses to the crystals.

What is the difference of deyrara sugar turbocharged sugar? Demerara and Turbinado candies are similar and are often mixed with each other.
Both are single crystallized raw candies. Both are large -grained, light brown candies, but Turbinado has a slightly thinner texture. It is less adhesive and gives less molasses taste than the debit.
