Rasmalai is a dessert specific to Indian cuisine. It is named after the words “Ras” (sherbet) and “malai” (cream). Remove the pot from the fire and drain the milk with a cheesecloth or a thin cloth. Draining using cloth or cheesecloth dipped in cold water several times before filtering the milk, allows the milk to contact with entire lemon juice or vinegar and get a better cut.
Transfer the drained milk to a bowl and knead. The kneading process takes 8-10 minutes and you need to knead until it becomes milk consistency.
Roll the kneaded milk into small balls and straighten by gently pressing.
Now, add 3 cups of water, 1.5 cups of sugar and 2-3 green cardamoms to a saucepan. Boil the mixture, mix until the sugar melts and hold it over low heat.
Now put the milk balls in boiling water and cook for 10-15 minutes.
Remove the pot from the fire and allow to cool.
After cooling, remove the balls and squeeze the excess water to the serving plate.
Sprinkle with rose water and chopped peanuts and serve.
