This beef stew, which is one of the most popular recipes of Indonesian cuisine, is carefully prepared to serve guests in ceremonies and special occasions in the region.
Rindang is most commonly made with beef meat. However, chicken and lamb meat can also be prepared.
In any case, this traditional meal, which is very tasty, is generally served with rice or Nasi Lemak (Malaysia Coconut Milk Rice). Bread and noodles are other compatible preferences.
The choice of meat for Rindang is an important point. Usually boneless beef is preferred. This makes the meat soft.
Beef Rindang Recipe Ingredients
Half kg boneless beef rib cubed
5- 6 tablespoons of oil
1 rod cinnamon
3 cloves
3 Stars Aniseon
2-3 pieces
A pinch of besbase (muscat peel)
A pinch of Lemon Grass
1 cup of coconut cream (intense milk)
1 cup of clean water
2 teaspoons of iron paste (wait in water and use only water)
1 tablespoon powdered sugar
1 pinch of salt
For the sauce
5 – 6 shallots onion
1 small piece of root hail
1 small piece root ginger
5 cloves of garlic
8-10 dry peppers (seeds extracted)
Preparation of
First, clean the sauce ingredients in small pieces and chop.
Pass through the kitchen processor to get thinner, puree consistency.
Then heat the oil in a saucepan.
Add the cinnamon, cloves, star anise and cacule to the oil with the sauce ingredients you pass through the robot.
Fry the mixture by stirring occasionally until the aromas come out.
Then include the beef and beaten lemon grass in the pot.
After 1-2 minutes, add coconut milk, ironin water, water.
Cook all the ingredients by stirring frequently over medium heat.
Finally, include the sugar and salt in the mixture and melt the sugar thoroughly, then bring the stove to the lowest heat.
It will take up to 1 to 1.5 hours to cook over the gravity of the rendan.
When the meat softens and pulls the sauce thoroughly, close the stove. Serve your food hot.
